Moving to the south of France ... what a dream come true, right?

Imagine that you’re not moving there to sip wine and nibble on cheese, though — imagine that you’re apprenticing at a butcher.

That’s the task that food writer Camas Davis undertook, on a quest to discover how one can truly become an “ethical carnivore.”

It certainly wasn’t easy or anything like the typical French vacation one might imagine, but Davis left with the answers she sought, as well as the inspiration for a memoir.
