When was the last time you discussed Palestine without referencing either religion or politics?

It’s been a long time, if ever, most likely. But Yasmin Khan is here to change that.

Khan, who’s a food writer and human rights campaigner, explores the region through its food in the book Zaitoun: Recipes from the Palestinian Kitchen.

She spoke with Morning Edition’s David Greene about the experience of visiting, writing, and (of course) testing the cookbook, which takes its name from the Arabic word for olive.
