The University of Texas at San Antonio is among the many organizations who saw 2020 disrupt big plans — and who then adjusted to the new reality.
For UTSA, that project was digitizing the country’s largest collection of historic Mexican cookbooks, according to Atlas Obscura.
Its pivot? Launching three ebooks that compiled some of the recipes in what had already been digitized before the world went remote.
The series — Recetas: Cocinando en los Tiempos del Coronavirus, or Cooking in the Time of Coronavirus — is two-thirds complete right now.
Recetas V1: Postres (desserts) and Recetas V2: Drinks can both be downloaded on the UTSA Libraries’ website, with Recetas V3: Main Courses still in the works.
